Banana Berry Super Fruit Tart: Kitchen Fireworks to celebrate the 4th!

The crust for this tart includes the spectacular combination of “super fruits”: Mulberry Berries, Gogi Berries, and Golden Berries.  “Super” berries are popular and exotic… and expensive.  Dried blueberries, cranberries, and raisins have significant nutritional benefits (without the carbon footprint!)

July 4th is a celebration of independence: break with tradition and go indulge in a fresh healthy tart that uses ingredients in a novel way. Good for your body, mind, and soul, this delicious, vegan, raw, healthy, and easy to make, this pretty dessert should debut on your table sometime this summer.

INGREDIENTS:

8 oz. walnuts

3 oz. pitted dates

1 oz. dried Mulberries

1 oz. dried Gogi Berries

1 oz. dried Golden Berries

1 tablespoon flax seeds

1/8 teaspoon sea salt (optional)

3 ripe organic bananas

1 whole organic lemon, quartered and seeded

3 tablespoons coconut oil, room temperature

1 tablespoon chia seeds (optional)

1 pint fresh blueberries, washed and dried

1 pint fresh raspberries, washed and dried

DIRECTIONS:

1.  Combine the nuts, dates, dried berries, flax seeds, and salt and pulse in a food processor until the mixture begins to come together as a “dough.”

2.  Firmly press the nut crust into a 9 inch tart pan or spring form pan. Chill while blending the filling mixture.

3.  Combine the bananas, lemon quarters, coconut oil, and chia seeds in the bowl of the food processor and blend until creamy. Pour into the prepared shell and refrigerate for 20-30 minutes before arranging the berries on top.

4.  Refrigerate for 2-3 hours before serving.
